เครื่องปรุง
ปลาจาระเม็ดขาว ควักไส้และล้างให้สะอาด บั้งตัวปลาทั้งสองด้าน ทาเกลือพักไว้
ต้นหอมหรือตั้งโอ๋(คึ่นช่าย) 2 ต้น ล้างและหั่นท่อนสั้น
ผักชี 2 ต้น ล้างและหั่นท่อนสั้น
เห็ดหอมแห้งแช่น้ำจนนิ่มล้างสะอาด ซอยบาง ๆ 4 ดอก
พริกชี้ฟ้าแดงหรือเขียว 3 เม็ด หั่นท่อนสั้นหรือซอยบาง ๆ
ขิงซอย 1/2 ถ้วย
พริกไทยป่น ½ ชช.
น้ำตาลทราย 1 ชช.
ซีอิ๊วขาว 2 ชต.
น้ำมันงา 2 ชต.
(ทั้งสี่อย่างผสมรวมกันไว้ราดตัวปลา)
วิธีทำ
1.ต้มน้ำในหม้อนึ่งให้เดือด นำปลาใส่จาน โรยน้ำมันงา ขิงซอย พริกชี้ฟ้า วางในหม้อนึ่ง นึ่งไฟปานกลาง 15 นาที
2.เทส่วนผสมเครื่องปรุงรสที่ผสมไว้ราดบนจานปลานึ่ง โรยเห็ดหอมซอย ต้นหอม ผักชี นึ่งต่ออีก 5 นาที
3.ปิดไฟ ยกลงพร้อมเสิร์ฟ
